Sugar cookies are usually a sign of the Christmas holiday and are sure to be a hit at any party or simply on the kitchen counter at home. Perhaps the most savory sugar cookies suitable for any diet are vegan, and taste the same if not better than dairy based cookies. They are easy to make and are light on the stomach! Here is how to make the most scrumptious sugar cookies and frosting.
You will need:
110g of pure organic soya spread
170g of flour
170g of granulated sugar
5 ml of vanilla extract
1.2 ml of salt
5 ml of baking powder
First mix the soya spread and sugar in one bowl evenly. When the soya spread and sugar are mixed throughout, add the vanilla extract.
In a separate bowl combine the flour, baking powder, and salt together and stir.
Mix the contents of both bowls together and stir until dough is formed. This may be done best using a whisk or mixer. Once the dough is formed place plastic wrap over the top of the bowl and refrigerate the dough for 1-2 hours.
Once the dough has been chilled you can begin making shapes or simple circular cookies to be placed on a cooking sheet. Preheat your oven to 175C.
Remember to leave ample space between the dough on the cooking sheet so that cookies do not overlap.
Bake for 15 to 20 minutes, or until they are golden brown around the edges.
When they are finished baking, place them on a drying rack or a cool space. Allow enough time to pass before frosting, as the sugar cookies will break if not cooled entirely.
It is possible to use premade frosting but you can also make your own. For this you will need to whisk 62g of icing sugar with 1 tbs. of soymilk (add more soymilk if necessary). For festive colors, mix food coloring in the frosting and apply with a small butter knife. Serve and enjoy!
